Shinken services · Jairo Shnaider

Japanese knife sharpening.

Care guided by each blade's steel, geometry and intended use. Sharpening, thinning, restoration and polishing for people who value their cutting tools.

Assessment via WhatsApp

The work begins with an assessment.

A knife that no longer cuts as it did may need edge maintenance or work on its geometry. Wear and damage call for a different assessment. The service is defined by the blade's condition and the result you are looking for.

At Shinken, the conversation starts with the tool: how you use it, what you notice when cutting and what work has been done on it before. Examining the blade determines the scope, respecting its construction and the limits of its material.

Jairo Shnaider brings 32 years of sharpening experience, with work spanning Brazil and Israel. The services are relevant to chefs, professional kitchens, collectors and people who maintain their own knives. Straight razors receive a separate assessment.

Sharpening

Establishing and maintaining an edge, with geometry and finishing suited to the blade and the work it will do.

Thinning and restoration

Assessing thickness, wear and damage. The work is defined by the condition of the blade and the limits of its material.

Polishing

Attention to surfaces, bevels and finish, respecting the construction and character of each blade.

Straight razors

Sharpening and polishing with close attention to delicate edge geometry and assessment for shaving.

Before we talk

A few questions.

How do I know what my knife needs?

Describe what you notice when cutting and share photographs of the blade and edge. This helps the initial conversation; examining the blade determines the scope of the work.

Can a damaged knife be restored?

It depends on the damage, the remaining material and the blade's construction. The possibilities and limits of restoration need to be assessed before any work begins.

How do we arrange a quote, delivery or shipping?

We serve customers throughout Brazil and Israel, as well as Europe and the Middle East by post. Contact us on WhatsApp or by email with your city, country and photographs of the blade. Pricing, timing and shipping instructions are agreed before you send your blade.
